Looking for a light and fluffy yellow cake recipe.?

I have tried tons of recipes and none of them are to my liking. They tend to be heavier, tasting closer to a pound cake then a bakery-type birthday cake. I'm looking for something that resembles the birthday cakes at Tiffany's in Clinton, MD or the Iverson Mall, or Gallo's in Mt. Laurel, NJ or even the Strawberry Shortcakes at Tiffany's in The Gallery (Phila, PA). I'm dying to know how I can get my yellow cakes to be a lighter texture. Fluffy Yellow Cake





Ingredients:





1 c. butter or margarine


2 c. sugar


4 eggs, separated


3 c. flour


3 t. baking powder


录 t. salt


1 c. milk


1 t. vanilla (I substituted almond extract)





Directions:





Separate egg whites from yolks. Beat egg whites until stiff (peaks form). Set aside. Cream butter and sugar well. Add egg yolks. Add dry ingredients to flour. Add flour and milk alternately. Add vanilla (or almond extract). Fold in egg whites. Pour into 3 greased and floured cake pans or 1 bundt. Bake degrees for 30 minutes (in 3 pans) or 45-50 minutes (in Bundt).Looking for a light and fluffy yellow cake recipe.?
To make any cake lighter, seperate the eggs, add the yolks as normal, but beat the the whites until stiff peak stage, and gently fold in last. Bake as normal. This will work with any cake, even cake mixes. Good Luck.

Use equal weight of egg, sugar, butter and flour.


Separate the eggs and whisk the egg white and keep aside.


Cream the sugar and add egg yolks alternating with flour. Add vanilla essence.


Last fold in egg white mixture and bake immediately.

Four Egg Yellow Cake





INGREDIENTS


1 cup shortening


2 cups white sugar


4 eggs


2 teaspoons vanilla extract


2 3/4 cups all-purpose flour


3 teaspoons baking powder


1 teaspoon salt


1 3/4 cups milk


DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 x 13 inch pan.


Cream together shortening and sugar. Beat in eggs and vanilla.


In a separate bowl, combine flour, baking powder, and salt. Add to creamed mixture alternately with milk. Mix well. Pour batter into prepared pan.


Bake for 45 minutes, or until cake tests done. Cool.
