What should i serve at my birthday/new years eve party i need simple recipes like appetizers or a light meal ?

Little sandwiches - a mix of chicken salad, egg salad, ham and cheese or turkey and cheese sandwiches cut into 4 triangles stacked nicely on a serving platter





Chicken salad


1 can white chicken breast, drained and shredded


1 stalk celery, diced


1/2 teaspoon poultry to multipurpose (chicken, fish, etc) seasoning


6-8 green grapes, halved, optional


2 tablespoons chopped walnuts, optional


several sliced rip olives, optional


dill or sweet relish, optional


1/4 cup mayo or miracle whip





Egg Salad


2 hard boiled eggs, chopped fine


1-2 tablespoons dill relish


1/2 teaspoon prepared mustard (wet yellow mustard)


1 tablespoon mayo


1/2 teaspoon salt


1/2 teaspoon pepper





Fresh vegetable and ranch dip tray





Fruit tray with fruit dip


8 oz softened cream cheese and 7 oz marshmallow creme combined





Spinach dip with cubes of pumpernickel and french bread


1 (10oz) package frozen chopped spinach, thawed and drained well


1 1/2 cups sour cream1 cup mayonnaise


1 package Knorr vegetable soup mix


1 (8 oz) can diced water chestnuts


3 green onions, finely chopped


Combine and refrigerate at least 2 hours before serving.

What you serve depends on if you are having mixed drinks or wine. Also depends on the crowd and how many you invite. Either way I would make it easy for you and have a variety of appetizers, but something that's shows you appreciate them coming over to celebrate with you. A light dinner is good but people like to mingle and munch and socialize. You can either go original or something with a twist, yea small things like mixed nuts are a nice salty muncher especially if your drinking. But something filling yet light is great. guacamole is a good idea if u make it fresh and the avocados are ripe and enough fresh lime juice so it doesn't turn brown from sitting on the table, ceviche with lime avacados ciliantro shrimp and imitation crab meat and seasonings is a great dip also, 7 layer bean dip, mimi sausages with a good BBQ chipolte sauce. A veggie platter with a good cracker and spinach dip is always a winner. One year for new years we did homemade egg rolls, fresh salsa and tortilla chips and were very easy. swedish meat balls,cheese balls,crackers,fruit platter,meat platter bread platter,veggy platter,nuts,punch.and a few mins before midnight get out the wine and toast the new year in.you can make most of the dishes a day or so in head of time,
Go for something like chicken wings, potato salad(deli bought would be fine) and guacamole and chips. a nuts assortment would do as well. Just make sure to have your bar well-stocked and people won't judge the food too harshly. Here's a good recipe for quacamole.
This link has 3 great recipes that are easy to make. One is a hot dish that is super simple and was a huge hit when I made it for a gathering last night.
