LOW CALORIE STUFFED PASTA SHELL SALAD
8 uncooked jumbo macaroni shells (1 1/2 oz.) cooked according to pkg. directions %26amp; drained
2 tbsp. reduced calorie Italian dressing (30 calories per tbsp.)
2/3 c. cottage cheese
1/2 c. part skim ricotta cheese
2 tbsp. minced scallions (green onions)
2 tsp. grated Parmesan cheese
1 tsp. lemon juice
1/8 tsp. grated lemon peel
Dash salt %26amp; pepper
(I use lower calorie dressing and adjust the optional calories down accordingly.)
In shallow glass or stainless-steel bowl, combine macaroni shells and dressing; toss to coat. Cover with plastic wrap and let marinate in refrigerator until chilled.
In small bowl, combine remaining ingredients. Using slotted spoon, remove shells from bowl reserving dressing. Spoon 1/8 of cheese mixture into each shell; set shells on serving platter and drizzle with reserved dressing. (I serve shells on a bed of lettuce and surround with sliced tomatoes.) Makes 2 servings, 4 shells each.

LOW CALORIE PASTA SALAD
1 bag veggie pasta noodles, cooked until done and drained
1 can (15 oz.) black olives
1 c. diced fresh tomatoes
1 c. diced carrots
1 c. grated cheese
1 c. diced ham
1 pkg. no oil Italian dressing, mix according to pkg. instructions
Combine all ingredients. Refrigerate until cool. Serve.

LOW-CALORIE SEAFOOD PASTA
1 pkg. linguine
1 (15 oz.) can white clam sauce
1 clove garlic, minced
Dash of white pepper
1 tbsp. dried or 2 tbsp. fresh minced parsley
2 tbsp. dry white wine
1/4 c. grated Parmesan cheese
1 (6 oz.) pkg. frozen baby shrimp
1/2 lb. imitation crab flakes
1/2 lb. scallops (optional)
Cook pasta according to package directions.
Combine clam sauce, garlic, white pepper, parsley, white wine, and 2 tablespoons Parmesan cheese. Add shrimp, crab flakes and scallops. Simmer all ingredients on low heat until sauce is heated through and scallops are opaque in color.
Drain cooked pasta and pour seafood sauce over it. Sprinkle with remaining cheese. Sprinkle with more parsley, if desired. Makes 4 servings.

LOW CALORIE CREAMY PASTA ALFREDO
1 1/2 c. 1% fat cottage cheese
2 cloves garlic, cut in half
1/2 c. skim milk
2 tbsp. flour
3 tsp. fresh lemon juice
1 tsp. leaf basil, crumbled
1/4 tsp. dry mustard
1/2 tsp. pepper
1/4 tsp. salt
1/2 lb. pasta of your choice
1 med. ripe tomato, cut in half, seeded %26amp; coarsely chopped
Place cottage cheese, garlic and skim milk in food processor. Process until there are no lumps. Add flour, lemon juice, basil, mustard, pepper and salt. Blend. Set aside in a medium size saucepan. Cook pasta according to directions and drain.
Place in large bowl. Heat ingredients in saucepan over a medium-low heat and allow to thicken slightly. Stir until sauce just begins to boil. Do not allow sauce to come to a full boil. Pour sauce over pasta and toss gently to coat. Garnish with tomato. Serve immediately.Any good light pasta recipes?
Tomato Pasta Toss:
INGREDIENTS
1 1/2 cups uncooked bow tie pasta
1 medium tomato, chopped
1 garlic clove, minced
1 teaspoon olive or vegetable oil
salt and pepper to taste
2 tablespoons shredded Parmesan cheese
DIRECTIONS
Cook pasta according to package directions. In a bowl, combine the tomato, garlic, oil, salt and pepper. Drain pasta and add to tomato mixture. Sprinkle with Parmesan cheese; toss to coat. Serve immediately.

Basill Chicken:
INGREDIENTS
1 (8 ounce) package angel hair pasta
2 teaspoons olive oil
1/2 cup finely chopped onion
1 clove garlic, chopped
2 1/2 cups chopped tomatoes
2 cups boneless chicken breast halves, cooked and cubed
1/4 cup chopped fresh basil
1/2 teaspoon salt
1/8 teaspoon hot pepper sauce
1/4 cup Parmesan cheese
DIRECTIONS
In a large pot of salted boiling water, cook angel hair pasta until it is al dente, about 8 to 10 minutes. Drain, and set aside.
In a large skillet, heat oil over medium-high heat. Saute the onions and garlic. Stir in the tomatoes, chicken, basil, salt and hot pepper sauce. Reduce heat to medium, and cover skillet. Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.
Toss sauce with hot cooked angel hair pasta to coat. Serve with Parmesan cheese.

Penne Pasta with Spinach and Bacon
INGREDIENTS
1 (12 ounce) package penne pasta
2 tablespoons olive oil, divided
6 slices bacon, chopped
2 tablespoons minced garlic
1 (14.5 ounce) can diced tomatoes
1 bunch fresh spinach, rinsed and torn into bite-size pieces
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add the penne pasta, and cook until tender, 8 to 10 minutes.
Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Place bacon in the skillet, and cook until browned and crisp. Add garlic, and cook for about 1 minute. Stir in the tomatoes, and cook until heated through.
Place the spinach into a colander, and drain the hot pasta over it so it is wilted. Transfer to a large serving bowl, and toss with the remaining olive oil, and the bacon and tomato mixture.

I agree with Angela with a few stipulations
Change to whole grain pasta
make a Pasta Primavera (olive oil not cream based). Add some quickly sauteed summer squash, red peppers, garlic, Broccoli and kick it up with some red pepper
Serve it like the Italians do - with a little olive oil. Fat does not make you fat. It is an essential component of the diet. Too much carbs can make you fat, so eat things like pasta in moderation.
