Can someone share a very good and light pancake recipe? thank you?

hey!!!!


I usually make light pancakes and I would love to share some of the best recipes with you!!!


here are the recipes :)!!hope you like them!!!





LIGHT AND FLUFFY PANCAKE:





INGREDIENTS:


2 cups milk


1 tablespoon lemon juice


1 large egg


3 tablespoons melted butter


2 cups flour


2 tablespoons sugar


2 teaspoons baking powder


1/2 teaspoon baking soda


1/2 teaspoon salt





METHOD:





Whisk milk and lemon juice in a medium bowl and set aside to let thicken.


In a separate bowl, whisk dry ingredients together - flour, sugar, baking powder, baking soda, salt.


Whisk the egg and melted butter into the milk mixture.


Create a little ';well'; in the center of dry ingredient bowl and pour the milky mixture in the center.


Whisk gently until just combined, there should still be lumps.


Heat a pan or griddle to medium heat and coat with butter or vegetable oil.


Pour pancake mixture by 1/4 cups and heat until large bubbles come to the top (about 1-2 minutes).


Flip the pancake and wait another 1-2 minutes!!!





another recipe:





Ingredients:


1 cup sifted all-purpose, pastry, or cake flour


1/8 teaspoon salt


1/2 tablespoon baking powder


2 egg yolks


3/4 cups milk, more or less


4 tablespoons butter, melted


2 egg whites


1 tablespoon sugar








Directions:


1. Sift the dry ingredients together.


2. In another bowl, mix the yolks, most of the milk, and the melted butter together until smooth.


3. Make a well in the middle of the dry ingredients and add the mixed wet ingredients all at once. Stir until just combined. (Over-mixing will make for a tough pancake.)


4. Beat the egg whites until light and fluffy and soft peaks appear as for meringue. Add the sugar toward the end of the beating. Fold the egg whites gently into the batter with a spatula. Add milk as necessary to get the right consistency.


5. Cook as you would other pancakes:).





another recipe: (MY FAVORITE ONE!!!)





INGREDIENTS:


3 cups all-purpose flour


3 tablespoons white sugar


3 teaspoons baking powder


1 1/2 teaspoons baking soda


3/4 teaspoon salt


3 cups buttermilk


1/2 cup milk


3 eggs


1/3 cup butter, melted





DIRECTIONS:


In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.


Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!


Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.





last but not least!!:





INGREDIENTS:


2 eggs, lightly beaten


1/4 cup canola oil


2 cups buttermilk


2 teaspoons baking soda


1/2 cup wheat germ


1/2 teaspoon salt


1 1/2 cups whole wheat pastry flour





DIRECTIONS:


In a medium bowl, mix eggs with oil and buttermilk. Stir in baking soda, wheat germ, salt and flour; mix until blended.


Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides, turning once.

Apple Pancakes





INGREDIENTS


1/4 cup butter, melted


1 egg


1 cup milk


1 cup shredded tart apple


1 1/4 cups all-purpose flour


1 1/4 teaspoons baking powder


1/4 teaspoon ground cinnamon


1 tablespoon white sugar





DIRECTIONS


In a large bowl, combine butter, egg, milk and apple. In a separate bowl, sift together flour, baking powder, cinnamon and sugar. Stir flour mixture into apple mixture, just until combined.


Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.Can someone share a very good and light pancake recipe? thank you?
Go with crepes. They are thinner, and better for you...and you still feel like you've had pancakes without all the heaviness. There are loads of good recipes on the net. I like ones that have a drop of vanilla in them. mmm mmm Now I know what I want for breakfast! = )
