Also I want the texture to be more chewy and not so fluffy. How come my chocolate chip cookies(nestle tollhouse recipe) are very light and fluffy? Is this right?

I've always used the recipe passed down from my Grandma and Mom. It's the same recipe on the package just substitute vegetable shortening for the butter/margerine. I know it sounds a little weird but it does not compromise the taste at all and they come out great.
Good Luck
use shortening instead of butter , also before you bake them put the dough in the refrigerator for a while to chill the dough that way it wont be warm when it goes ont he cookie sheet therefor holds it shape more. Take them out of the oven before they get too brown. light brown around the edges is better . The more you bake them the crispier they will be.
All the answers could be right. Also check your flour to make sure it is all-purpose and not self-rising. If it's self rising and you added baking soda, you would be doubling the rising ingredient.
like lise said less baking soda oh yea and more chocolate chips. try to find different chocolate chips maybe bigger ones
When you take the cookies out of the oven, smack the cookie sheet on the counter then wait one minute and remove to wire rack to cool. This will make them flat and kinda crunchy. It's a matter of personal preference.
