I've got one for a warm honey dijon bacon dressing that's pretty awesome over a cranberry spinach salad. It gives you your choice of using regular or turkey bacon - and since you're using the bacon and not the grease, you get the flavor without the fat.
Dressing (makes one cup)
4 slices bacon or turkey bacon, cooked crisp, crumbled finely
1/2 cup plain or orange-flavored honey
1/2 cup lime juice
2 tbs Dijon mustard
Combine dressing ingredients in a small glass mixing bowl using a wire whisk. Heat in the microwave on HIGH for 1 minute or until warm. Pour over salad and toss.
The only ways I can think of to lighten it up would be to use tofu or turkey bacon instead of 'regular' bacon, and sugar sustitute (like Splenda) in place of the sugar. There's just not that much else to lighten up on.
I've used turkey bacon in the following with pretty good results:
Hot Bacon Dressing
3/4 pound sliced bacon, diced
1/2 cup chopped onion
1 cup cider vinegar
2 cups water
1 1/2 cups sugar
1 (2 ounce) jar diced pimientos, drained
2 tablespoons Dijon mustard
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons cornstarch
2 tablespoons cold water
In a large skillet, cook bacon until crisp; remove bacon and set aside. Drain, reserving 2 tablespoons drippings in the skillet. Add onion and saute until tender; remove from the heat. Add the vinegar, water, sugar, pimientos, mustard, salt, pepper and bacon; mix well. Combine cornstarch and cold water; stir into skillet. Cook and stir until mixture comes to a boil. Boil for 2 minutes, stirring constantly. Serve warm over fresh spinach or mixed greens. Refrigerate leftovers and reheat before serving.
